Ingredients(For 1 serving)

  • Chinese chive 100g
  • 2-3 eggs
  • 2 knobs of salt
  • Soy sauce (1tsp)
  • Cooking sake (1tsp)
  • A little sesame oil
  • Vegetable oil or Olive oil

How to make

  1. Cut Chinese chive.
  2. Break the egg into a bowl, add salt, cooking sake and soy sauce and mix well.
  3. Put salad oil or olive oil, and chinese chive stalks (hard part) in a pan and stir on medium heat for a few seconds.
  4. Turn the heat to high and add the leaves (soft part), fry for 1-2 seconds, and immediately add the eggs.
  5. Do nothing for a few seconds(about 10 sec) after adding the egg (do not stir)
  6. When the eggs get started hard, stir them once or twice, add sesame oil.

Point

  • If you cook the Chinese chive for about 15 seconds, it will be crispy and delicious.
  • However, the stem part may have a spicy taste, and if you are not good at it, cook it well to remove the spicy taste. If you like spiciness, just fry it with the leaves.
  • After adding the egg, leave it for a few seconds, and when it hardens, stir it Roughly, the Chinese chive and the egg are well entwined and delicious. At this time, be careful not to burn the eggs.
  • If you heat the sesame oil too much, the scent will disappear, so put it at the end.
