Wonderful japanese food Daikon radish with sweet miso
Daikon and miso really goes well! You must try this at least once.

Don’t you leave the water running when you wash the dishes? Water is an important natural resource. Let’s use washtub. You can save 1/9 of the amount of water If you use dishwasher.
Ingredients(For 1 serving)
- Half to one-third of Japanese white radish(Daikon)
- 1 piece of kelp(kombu) 10 cm square
- Miso (2tbsp)
- Sugar (3tbsp)
- Cooking sake(1.5tbsp)
- Sweet cooking sake (Mirin) (1/2 tbsp)
How to make
- Peel the radish thickly and cut it into coins about 5 cm thick. Make X-shape on the surface of the Daikon radish.
- Put enough water to cover the radish in a pot, add kelp and radish, and simmer for about 40 minutes.
- Make miso while boiling. Mix all the seasonings and simmer in a frying pan.
- When it feels sticky, it’s done.
- When the radish is boiled, add the miso.
Point
- Making the x-shape makes it easier for cooking.
- Japanese white radish is tough, so I recommend to peel the radish thickly and boil it for at least 40 minutes.
