Mexican beans dish, frijoles stew and rice
frijoles is a Mexican dish of beans boiled in salt. I’m going to introduce a arrangement recipe. I’m using Indian beans this time, but try this using your favorite beans!

Ingredients(For 1 serving)
- Cooked rice (this time jasmine rice) for 1 serving
[Frijoles] - Rajima beans (Indian red kidney beans) 50g
- 1 clove of garlic
- 5 dash of Cumin powder (1/8 tsp)
- 5 dash of Oregano (1/8 tsp)
- 1/4 onion
- 1 green pepper
- A pinch of salt
【Fresh salsa】 - 8 Cherry tomato
- 1/4 Onion
- Coriander as needed
- A little Salt
- Tabasco as needed
- 1/4 Lemon juice
【As you like】 - Coriander as needed
- Avocado as needed
- 1/4 Lime
How to make
[Frijoles]
- Soak the beans in water for about 3 hours. (Minimum 3 hours)
- Finely chop the onions, garlic and green pepper.
- Put the garlic in a pan with oil, and when the aroma comes out, add the onions and peppers and stir-fry until coocked.
- Put 300ml-500ml of water in the same pot, add beans, salt and pepper, cumin powder, oregano, and boil over low heat until the beans are cooked. (About 2 to 3 hours. Almost all the water evaporates.)
- Add salt and pepper to taste again.
【Fresh salsa】
Cut the tomatoes into quarters, chop the onions and mix all seasonings.

Serve rice with frijoles and fresh salsa, add Coriander and avocado if you like. It is refreshing to eat with a little lime juice.
Point
- It will take some time for the beans to cook, but it’s very easy to cook.
- Rice that has low water(such as Indica rice or Thai rice) is goes well.
