Gnocchi with eggplant and basil tomato sauce

【Gnocchi】

  • 2 potatoes
  • Bread flour 100g

  • Tomato sauce

  • appropriate amount of basil

  • appropriate amount of Takanotsume

How to make

  1. First, make the sauce. Put garlic and Takanotsume in a pan with olive oil. Low heat over until the garlic scent comes out.
  2. When the aroma comes out, add the sliced ​​eggplant and salt and pepper. (After cutting the eggplant, soak it in water to remove the lye.)
  3. When the eggplant is tender, add tomato sauce, salt and pepper, Worcestershire sauce, and vegetable broth to simmer.
  4. Next, make gnocchi. Boil potatoes until they are tender and strain.
  5. Mix the potatoes with bread flour and salt. When the dough becomes small lumps, add olive oil and knead them together.
  6. When it comes together, Stretch it into a stick shape, cut and roll it up, push it lightly with your thumb so that it is slightly dented.
  7. Bring the water to a boil, add the gnocchi, take it out when it floats, and entangle it in the sauce.
  8. Decorate with basil and it’s done!

Point

If you push the gnocchi lightly with your thumb, It’s going to be easily to mix the sauce.
You should not dry the gnocchi.
