Vegan Stir-fried beancurd in hot sauce (Mapo Tofu)

You can eat as many rice as you like!You can use eggplant instead of Tofu. Mapo tofu that brings out the aroma of vegetables.

Don’t you leave the water running when you wash the dishes? Water is an important natural resource. Let’s use washtub. You can save 1/9 of the amount of water If you use dishwasher.

Ingredients(for one to two serving)

  • 1 piece of ginger
  • Garlic
  • One cake of tofu(about 300g)
  • Leek or green onions as needed
  • One stalk of Chinese chive
  • Tianmian (1tbsp)
  • Doubanjiang (1tbsp)
  • 2 knobs of sugar
  • Cooking sake (1tsp)
  • Water 200cc
  • Water-soluble potato starch

How to make

  • <Preparation>
  • Cut the tofu into a suitable size, boil it, and drain the water.
  • Grate garlic and ginger
  • For green onions, cut the green part into round slices and chop the white part into small pieces
  • Cut the leek into a suitable size (cut it short to make it look good)
  • Add 1 teaspoon of water to 1 teaspoon of potato starch to make water-soluble potato starch.
  1. Put garlic, ginger and green onions (Green part)in a pan and stir over low heat to bring out the aroma.
  2. When the aroma comes out, add chinese chive, tianmian sauce, and doubanjiang.
  3. When it’s cooked, add water, and when it’s boiled, add tofu.
  4. It will be mild if you taste it and add sake and sugar as you like.
  5. Finally, add the green onions(white part), turn off the heat, add the water-soluble potato starch to thicken.

Point

  • Tianmian sauce and Doubanjiang are a type of miso and are used in Chinese cuisine.
  • The usual recipe uses minced meat, but since this recipe does not use meat, so adding sugar or cooking sake makes it milder. You can enjoy the aroma of white part of green onions by adding them just before eating.
  • You can use eggplant instead of Tofu.
