Patatas Alioli is a Spanish dish made with potato and garlic, is originally made with mayonnaise.
If you have vegan mayonnaise, you can use it with it to make a western style potato salad. Patatas Aglioli have many faces, and they make a gorgeous addition to a main dish!

Ingredients (For 2~3 serving)
- 2 potatoes
- 1 clove of garlic
- A pinch of parsley
- Salt and pepper to taste
- 1 to 2 tablespoons olive oil
- 1 tablespoon vegan mayonnaise (if available)
How to make
- Peel the potatoes, cut them into quarters, and soak them in water. Discard the water and fill a pot with plenty of water, and boil until tender.
- Roast and crush the garlic (if you don’t have time, you can just grate it), season with salt and pepper, and mix with olive oil.
- Pour off the hot water from the pot, making sure the potatoes don’t fall out, and let the hot water that cannot be poured off evaporate over low heat. (Be careful not to burn the potatoes.)
- Mix in the olive oil from step 2 and sprinkle with parsley.
- If mixing with mayonnaise, cool down the potatoes for a few minutes before mixing to prevent the mayonnaise from separating.
Point
- Grilling the garlic will make it more fragrant.
- If you want to mix the potatoes with mayonnaise, remove the potatoes from the heat before mixing them.
