Super easy, refreshing vegan pho (Somen noodles)
It’s refreshing so you’ll want to eat it on a hot day. The remaining juice turns into Spanish food! By the way, Somen is the Japanese very thin noodle made of wheat flour.

Ingredients
- Pho or Somen noodles for one serving
- Bean sprouts 100 ~ 150 g
- Coriander as much as you like
- Vegetable broth(powder) 4-5 g
- Water 250cc-300cc
- 1 tablespoon of cooking sake
- Lime or lemon if you have
How to make
- Let’s make soup. Put the vegetable broth in water, add cooking sake and bring to a boil.
- When soup boiled, put the bean sprouts in and cooked. (1min)
- Boil the noodles.
- Put the soup and noodles in a bowl and top with coriander.
- Squeeze lime or lemon to finish.
Point
- Squeezing lime or lemon will make you feel refreshed more!
- The remaining juice can be used for risotto.
