Ingredients
- Bread flour 200g
- 1 tablespoon of salt
- Sugar 10g
- Dry yeast 3g
- Warm water(25~30℃) 100 ml
- olive oil 10g
- Appropriate amountof Coarse salt
- 1 tablespoon of baking soda
How to make
- Put flour, salt, sugar, olive oil and yeast in a bowl, and knead by hand while adding warm water little by little.
- When the powder is gone, knead while tapping the dough on the table. When the whole thing comes together, knead it while putting your weight on it with your palm, and when the surface becomes smooth, move your hands down from the surface like to make a film on the surface to roll the dough into a ball.
- Put it in a bowl, cover it with a wet towel and leave it for about 20 minutes.
- After 20 minutes, press lightly to release the gas.
- Divide into 3-4 equal parts, roll one by one, cover with a wet towel and leave for 20 minutes.
- After 20 minutes, make the shape. Flatten it with your palm and fold it as shown in image 1.
- Stretch it into a stick shape (image 2), twist the thin side (image 3), and make it into a pretzel shape.
- Put on a wet towel again and leave it for 20 minutes. Meanwhile, add 1 tablespoon of baking soda to 350 ml of water and bring to a boil.
- When the baking soda boils, turn off the heat and soak the dough in the baking soda for 10 to 15 seconds.
- Make a notch (coup) on the surface and sprinkle with coarse salt.
- Let sit for a few minutes until the surface dries. Meanwhile, heat the oven to 200 degrees.
- Bake in the oven at 170 ℃ for 15-20 minutes.
- When it becomes a good color, it is completed!
Point
If you do not use warm water, yeast will not work, so please use warm water.
In Germany, it is soaked in sodium hydroxide, but at home, it tastes authentic if you soaked in baking soda.
