Easy anauthentic vegan hot and sour soup noodles (ramen)

Ingredients

  • Noodle for ramen for one serving
  • 1/3 of tofu (about 100g)
  • Wood ear as needed
  • Green onion as neededs
  • Water 400cc
  • Vinegar(2.5tbsp)
  • 2 to 3 knobs of salt
  • Soy sauce(3tbsp)
  • White pepper(1tsp)
  • Vegetable broth (powder) 4-5g
  • 1 Eggs (no vegans)
  • Chili oil as needed
  • Water-soluble potato starch (1 tsp of potato starch vs. 1tsp of water)
  • Coriander (if you like it)
  • Mozuku (If you like)

How to make

  1. Finely chop the green onions white part, wood ear and tofu cut into long strip, and chop the coriander.
  2. Boil water and add salt, pepper and vegetable broth. At this time, keep it between low and medium heat.
  3. When it’s fluffy, add a wood ear mushroom, and skim the foam from the top of the soup.
  4. Add tofu and test the soup. At this time, there is no problem even if the taste is strong. you can adjustable later.
  5. Turn off the heat, add water-soluble potato starch to thicken it. Then turn on the heat. When stirring, slowly!

  6. Add vinegar and turn off the heat.
  7. Boil the noodles and serve them.

Point

  • Do not boil the soup.
  • Be careful not to let the tofu crumble.
  • Please try using white pepper! The taste is completely different.
  • The spiciness of white pepper is outstandingly delicious!
  • If you like coriander, it’s also delicious with it. Mozuku is same as it.
