Deep fried dough is no waste, economical ingredients!

It’s very Japanese to use Deep fried dough for cooking, and I really like that sensibility. There is a spirit of not wasting things.

Deep fried dough can be used in any dish depending on your idea. Commonly used are low-oil dishes such as soba noodles, udon noodles. Also it often used in Okonomiyaki and Takoyaki (Octopus Dumplings). It goes well with Flour based foods. Some people mix deep fried dough with rice. As the tendon (Bowl of rice and Tempura) proves, tempura and rice go well together.

It’s called Tenkasu in japanese. Ten as in Tempra, Kasu means crumbs.

You can get deep fried dough at grocery stores

You can get deep fried dough when you make tempura at home, but usually buy it at the grocery store. You can buy it at the store for about 30 to 50 yen ($0.29 – $0.49).

Raccoon and Fox

Soba noodles or udon noodles with deep fried dough are called “Tanuki”. Tanuki means raccoon dog. On the other hand, Soba noodles or Udon noodles with fried tofu are called “Kitsune”. Kitsune means foxes.

However, this varies slightly from region to region. For example, in the Osaka area, Kitsune (fox) are udon noodles with fried tofu, and Tanuki ( raccoon) are soba noodles with fried tofu. In other words, they distinguish by soba noodles or udon noodles, not by ingredients. Those with deep fried dough are called completely differently.

Deep fried dough changes the taste

The taste changes by adding deep fried dough. The oil blends well with the dish, giving it a rich and crispy texture. In Japan, for example, if you want to change the taste while eating Soba or Udon, often add it in the middle to arrange the taste. Of cource the way to change the taste is not only deep fried dough.
