Rich flavor with lot of vegetables Vegan Bolognese

The vegan bolognese made only with the taste of vegetables is a very satisfying dish. It is really delicious with only vegetables!

Don’t you leave the water running when you wash the dishes? Water is an important natural resource. Let’s use washtub. You can save 1/9 of the amount of water If you use dishwasher.

Ingredients

  • Spaghetti for 1 serving
  • Half onion
  • 1 carrot
  • 1 celery
  • About 300g of whole tomatoes (diced tomatoes)
  • Worcestershire sauce (1-2 tsp)
  • Vegetable broth (powder) (4-5g)
  • Salt and pepper
  • Butter 5-10g(Not for vegan)

How to make

  1. Chop into small pieces the vegetables and stir it.
  2. Crush the whole tomatoes by hand and boil the sauce down over medium heat for about 20 minutes until the acidity disappears.
  3. Boil the spaghetti.
  4. When the tomatoes are boiled, add Worcestershire sauce, butter(not for vegan), salt and pepper.
  5. Put the boiled spaghetti in a pan, and mix the sauce.

Point

  • If you like the acidity of tomatoes, It’s okay if the boiling time is short, but
  • if you don’t like it, boil it down until the acidity disappears. And It’s better to season after boil it down.
