Vegetable ramen with a beautifully clear soup
Vegetable noodle(called Tanmen) filled with plenty of vegetables. It’s easy, so good when you want to have a quick lunch.

Don’t you leave the water running when you wash the dishes? Water is an important natural resource. Let’s use washtub. You can save 1/9 of the amount of water If you use dishwasher.
Ingredients
- Noodles for ramen 1 serving
- 2-3 cabbage leaves
- One stalk of chinese chive
- Bean sprouts half bag (100-150 g)
- 2 wood ear
- A piece of ginger
- A clove of garlic
- Water 250cc-300cc
- Vegetable broth(powder) 4-5g
- 1/2 teaspoon of sesame oil
- 1 tablespoon of cooking sake
- A little salt and pepper
How to make
<Preparation>
- Cut vegetables into bite-sized pieces and wood ear into pieces that are easy to eat.
- Grate ginger and garlic.
- Put the oil in a pan and add the grated garlic and ginger.
- Fry the vegetables when the aroma comes out. If you stir fry it over high heat, it will have a crispy texture. When the vegetables are cooked, add the wood ear mushrooms.
- The soup is made by dissolving vegetable broth(powder) in water, adding cooking sake and boiling. Taste and adjust the taste with salt.
- Boil the noodles.
- When the noodles are boiled, put the soup in a bowl, serve the noodles and vegetables in that order, and finally add sesame oil. sprinkle pepper if you like.
Point
- If you fry the vegetables over high heat, the crispy feeling will remain, and if you fry slowly, it will be moist, so please fry as you like.
- It’s delicious even with a little vinegar.
